What you need

cup old fashioned oats

cup vegan margarine
cup unsweetened applesauce

tsp ground cinnamon

pinch nutmeg

tsp salt

tbsp molasses

tsp baking soda

cup brown sugar

tsp vanilla extract

cup dried cranberries
Instructions
1 Preheat oven to 350° 2 In a large bowl, cream together both sugars and the vegan butter 3 Next, add in all other ingredients and combine until evenly mixed (careful not to over-mix) 4 Line a baking sheet with parchment paper and use a cookie scoop to evenly distribute the cookies, spacing them appropriately. Gently flatten them a bit so that they are the shape and thickness you want them to be when they're done. 5 Transfer the cookies to the oven and bake for 10-12 minutes. 6 Once done baking, let cool for 5-10 minutes and enjoy!
