What you need

cup white onion

tsp fresh ginger

tsp coconut aminos

tsp red pepper flake

cup pineapple chunks

tsp granulated garlic

cup white onion

cup cashew

cup raisin

cup quinoa

tbsp soy sauce

firm tofu

salt & pepper
Instructions
1 Begin by cooking your quinoa according to the instructions on the packaging. 2 While the quinoa is cooking, begin chopping your carrots, red onions, green onions, and pineapple if not using canned. Also grate ginger. Set aside. 3 In a large pan, add 2 tsp of coconut aminos over medium heat and begin to saute the onions, garlic, ginger, and carrots. Saute for about 10 minutes or until carrots are tender. Add salt+pepper to taste. 4 Add in the pineapple and red pepper flakes and combine with the other ingredients. 5 By now, your quinoa should be finished cooking. Add the cooked quinoa to the pan with the rest of the ingredients, along with the cashews, raisins, green onions, and soy sauce. Stir until all ingredients are combined.
