
Easy Vegan BBQ Jackfruit Pulled Pork

What you need

salt

cup salad dressing

tsp dijon mustard

whole wheat hamburger buns

tsp celery seed

tsp light-brown sugar

yellow onion

cup broccoli

pinch crushed red pepper
tbsp vegetable oil

tsp cumin powder

jackfruit

tsp liquid smoke

cup bbq sauce

tsp sugar

tsp apple cider vinegar
Instructions
In a medium pan, heat the olive oil over medium heat. Sauté the diced onion for about 3 minutes or until it becomes translucent. Add in the jackfruit. Mash or shred with a fork until it resembles pulled pork. Stir in seasonings and sugar. Add the BBQ sauce and liquid smoke. Reduce to a medium low heat and stir to combine all of the ingredients. While the jackfruit is sitting, combine all ingredients to make the coleslaw in a medium sized bowl. Set aside. Load your burger bun with a helping of the jackfruit, a little more BBQ sauce and coleslaw. Enjoy!View original recipe
