What you need

cup frozen spinach

tbsp lime juice
cup maple syrup

Instructions
1 Begin by adding oil or water to a large pan along with minced garlic and diced onions. Saute over medium heat until garlic is fragrant and onions are translucent. 2 Once the onions and garlic are cooked, add in all of the remaining sauce ingredients and stir until combined. 3 Add in rinsed and drained chickpeas and cook over medium-low heat for about 10 minutes. 4 Once the sauce has thickened and mixture is finished cooking, begin stirring in the fresh spinach until the leaves have wilted. 5 Serve over rice or lettuce wraps.
