Vegan Egg + Sausage Breakfast Taquitos
A vegan egg and sausage breakfast scramble wrapped up in a tortilla. Recipe Instructions: Cook vegan sausage patties according to package instructions. Once the sausage patties have been cooked, chop into small pieces and set aside. Add diced onions and bell peppers to an oiled pan and cook over medium heat until soft. Season to taste and stir frequently. Add 6 oz. (about 1/2 bottle) of JUST Egg to the pan with the peppers and onions along with the chopped vegan sausage. Season to taste. Scramble until mixture is well combined and the JUST Egg has been cooked. On a clean, flat surface lay out your tortillas and layer each with vegan cheese and the JUST Egg scramble (about 2 spoonfuls). Roll tightly, then place back into the pan with the seams facing down. Brown on both sides over medium heat. Once done, remove from the pan and enjoy with salsa (optional)!
