I Can You Can Vegan

1 In a medium sized pan over low-medium heat add 2-3 tsp of olive oil.  Add the half block of tofu to the pan and use the back of a fork to break up into crumbles. 
2 Add the taco seasoning, nutritional yeast, and ground turmeric to the tofu. Stir to combine. 
3 Once combined, add the peppers and onions. Increase to a medium-high heat and season with salt and pepper to taste.  Stir frequently.
4 In a separate pan, begin cooking your Meatless Sausage Patties according to package instructions. 
5 Toast English muffins. 
6 Once the peppers and onions have been cooked through and the English muffins have been toasted. begin building your breakfast sandwiches: bottom half of English muffin, tofu scramble, vegan cheese (melt to help hold together), Meatless Sausage Patty, sliced tomato, sliced avocado, cilantro and top half of English muffin. Enjoy!
