What you need

cup frozen spinach

cup coconut milk

tsp granulated garlic

cup vegetable broth

yellow onion

tbsp curry powder

tsp salt

tsp thyme

tsp black peppercorn
Instructions
1 In a large pan over low-medium heat, saute your diced onions and minced garlic until the onions are translucent and the garlic is fragrant. 2 Stir in the coconut milk and vegetable broth. 3 Add in all the seasonings, frozen spinach, and lentils.
